Ada Coleman
BARTENDER, MIXOLOGIST (1875 - 1966)
Ada Coleman ('Coley') was a pioneering
bartender. She became head bartender at the
Savoy Hotel 's American Bar. At a time when
few women were in the industry, Coleman not
only became the first celebrity bartender at
the Savoy, but also focussed on the technical
elements and the hospitality side of her role.
She had a lively, engaging personality with a
flair for the theatrical. This helped her grow in
fame. She served many people including
Mark Twain and Charlie Chaplin. Coleman
was a talented mixologist, creating new drinks
she hoped people would love. She created
the Hanky-Panky for an actor. Coleman
explained in 1925; "The next time he came in,
I told him I had a new drink for him. He sipped
it, and, draining the glass, he said, 'By Jove!
