French Onion Soup

METHOD
1. Peel and slice onions thinly.
2. Melt butter in a large pan. Add
onions and cook for 10mins until
soft - lid on.
3. Add sugar and keep cooking the
onions uncovered for 40 mins (it
might take longer) until the onions
are caramelised. Keep going until
the onions are soft, sweet and
golden - this is where the flavour
comes from. Pinch of salt also helps
onions soften. Keep checking and
stirring to stop burning. Add the

YOU WILL NEED
1kg onions
50g butter
1 tsp sugar
4 cloves of crushed garlic
2 tbsp plain flour
1.5l good quality stock
Splash of Worcestershire sauce
Salt and pepper
Sliced baguette and grated gruyere
cheese.
garlic for the last couple of minutes.
4. Add the flour and stir.
5. Gradually add the stock stirring all
the time.
6. Simmer for 20mins. Season to taste
with salt pepper and Worcestershire
sauce.
7. Add grated gruyere cheese to sliced
baguette and place under the grill
until toasted.
8. Serve soup with a couple of slices of
the cheesy baguette on top.
